The sun will come out [today], [today]

The sun finally came out today. This made me very happy and I strolled around campus like I was high on life. It is incredibly amazing how good sunshine makes me feel after several cold wet days of blah and cold and blah. It made me actually realize that I (gasp) enjoy riding the bus on Tuesday and Thursday mornings. Now if only it dropped off in a more convenient place closer to the vet school, I’d be all set. But really, the bus driver guy waited for me this morning as I ran frantically (my hair clip fell out dammit!) to catch the bus because I was running wait. I said thank you to him about 50 times and even though it was one of those old-school ghetto school bus type buses, I didn’t really mind. It’s so much more convenient to have safe clean mass-transit than driving my car and hauling butt over to my classes. I however believe that this does not correlate to real-life mass transport, which is in fact dirty, smelly, a good way to get your lunch money stolen and a vector for infectious disease.

In other news, posting that recipe about potato soup last night spurred to want to make some more fun things and post them on here and perhaps shift the focus of my blog. No one really wants to hear about my exploits as a BIMS major, but I’m sure ALL OF YOU want to hear about my exploits as an angry, frantic chef. Of course I will still include posts such as these about the idiocy of my own life. However, I really need an excuse to get out of my cooking rut (there is only so much sauteed chicken and pasta salad I can take) and I will begin by making waffles my breakfast food of choice and actually cooking at least two real recipes a week.

On this weeks menu we have: Peppery chicken (stir-fry), Salmon Filet with Mojo Sauce (tapas), chicken in garlic cream sauce (a good staple), and Sesame chicken (given that I can find tapioca starch, whatever the hell that is).

Also, tonight is the first chukkars of the spring season so I am excited to get to use my new mallet and maybe hit a ball tonight and definitely stay on the back of the horse. I heard a funny quote recently that was something like, “Horsemanship is the art of keeping the horse between you and the ground,” which I think is a pretty apt saying for my personal philosophy about my equine exploits.

Potato Soup

I added a recipe for Creamy Potato Soup. If you have the time, I suggest making it (it took about an hour). It’s a great way to warm up after a long cold day of trudging from class to class.

I have nothing really new to report except: Wow, is biostat turning out to be the most boring class EVAR.

I’m beginning to think that this semester, despite being my hardest yet, will be manageable, if I can only manage to keep up with it. After school was delayed two days last week, Thursday and Friday turned out to be (as suspected) the catch-up game and I feel a bit rushed at the moment. However, despite a nap yesterday afternoon, I am currently not behind in anything and can’t wait until I get a few free hours to sit down and do my readings for tonight. Wait, did I just say that? It’s tedious and it takes a long time, but the fact that I don’t have all this crap looming over my head feels nice.

The weather outside still sucks. It’s supposed to rain for the next couple of days too. I’m pretty sure I’m one of those people who gets seasonal depression if there isn’t any sunshine for a while. I was having a wonderful day on Sunday (it was warmish and so sunny) despite the colic with Fea at the barn - but yesterday and today are just blah because it’s ugly and devoid of light outside. I need vitamin D! But, even though the weather sucks, my boredom levels have dropped because at least I always have something to do, if I feel like doing it.

T-minus one week until the first round of 5 tests in 5 days.
